What is Cooking Temperature?

Cooking temperature is how hot an oven or pan is. Recipes use Celsius, Fahrenheit, or on older gas ovens a gas mark. Fan ovens circulate air and cook hotter, so their setting is lower than a conventional oven for the same result.

About Celsius (°C)

Celsius is the temperature scale used in most of the world, with water freezing at 0 °C and boiling at 100 °C. Most European recipes give oven temperatures in it.

  • 180 °C is a moderate oven
  • 200 °C is a hot oven
  • Fan ovens usually run 20 °C lower

About Fahrenheit (°F)

Fahrenheit is the temperature scale used in the United States. US recipes give oven settings in it.

  • 350 °F is a moderate oven (about 175 °C)
  • 425 °F is a hot oven (about 220 °C)
  • °C = (°F − 32) × 5/9

About Gas Mark (mark)

Gas mark is a numbered oven setting used on gas ovens in the UK and Ireland. Mark 4 is a moderate oven at 180 °C.

  • Gas mark 4 = 180 °C = 350 °F
  • Gas mark 6 = 200 °C = 400 °F
  • Each mark adds about 14 °C (25 °F)

About Fan Oven (°C)

A fan (convection) oven moves hot air, so food cooks faster and recipes are set about 20 °C lower than for a conventional oven.

  • Fan setting = conventional − 20 °C
  • 180 °C conventional = 160 °C fan
  • Fan ovens brown more evenly
